Homemade muesli bars

This versatile recipe makes a great family snack - without the wrapper-guilt!
Add your family's favourite fruit and/or nuts and make this recipe your own. These muesli bars can also be dairy-free by replacing butter with coconut oil, or gluten-free by replacing the rolled oats with cornflakes.

Ingredients

1/2 cup of honey
1/4 cup brown sugar
100 grams coconut oil
50 grams butter (or 150 grams butter if you don't have coconut oil)
2 cups rolled oats
2 cups rice bubbles
1/2 cup coconut
1/2 cup sunflower seeds
1/4 cup sesame seeds
1/4 cup LSA (ground linseed, sunflower and almond)
1/2 cup raisins, sultanas or currants
1/2 cup cranberries
1/2 cup dried apricots chopped

Optional:
Melted chocolate or lemon icing as a toping.

Method

1. Line a slice tray with baking paper and preheat the oven to 180 degrees.

2. Melt butter and coconut oil in a saucepan together with the honey and brown sugar. Stir until butter and oil have melted and sugar is dissolved and then boil for 3 minutes until the mixture has thickened. Remove from the heat.

3. Mix remaining ingredients together in a large bowl and then add hot syrup, stirring to combine.

4. Pour mixture into tray and press firmly - wet hands are helpful here.

5. Bake for 10 minutes, until golden.

6. Cool before decorating with melted chocolate or a thin lemon icing (optional... quite handy to make bars more attractive to kids though!).

7. Put it in the fridge to cool and set completely before slicing into bars or squares.

8. Makes approx 26 bars and would cost roughly $6 - $8 in ingredients.
